from trees planted on fertile volcanic soil. With a focus on innovation

FERMENTATION
During anaerobic fermentation, coffee cherries are placed in tanks
with a valve that replaces oxygen with CO2 to enhance natural
flavors. The process controls factors like time, temperature, pH, and
brix content, using the farm's native yeast. After fermentation, the
coffee is dried on patios or raised beds, stirred daily from 8 am to 2
pm, and covered at night to prevent moisture absorption, with drying
taking 7 to 16 days, depending on variety and weather.
