Anthony Vasquez is a third‑generation coffee producer, carrying forward his family’s legacy on his 4‑hectare farm in San José de Lourdes, San Ignacio, Cajamarca. After more than four years selling to various Peruvian exporters, Anthony gained a deep understanding of the specialty market. He’s known for being proactive: today he and his family are pursuing certified-organic production, and he’s actively involved in providing technical assistance within his community.
FERMENTATION
Ripe cherries are rested for a few days after picking. Drying takes place under solar dryers for 25–30 days—slow, climate-dependent drying that protects the parchment while ensuring clean, stable cup quality.
