    FERMENTATION

After harvesting, overripe, damaged, and defective cherries are
removed, keeping only well-ripened red cherries. The cherries are
manually pulped in the evening, fermented overnight, and then
washed in the morning before being shaded from direct sunlight. The
beans are dried on raised beds for about 14 days until they reach a
moisture content of 10.5% to 11%.

    Tax included.
