FERMENTATION
Cherries are sorted by removing floaters and then pulped by pressing them against a centrifuge. After pulping, the coffee cherries, keeping 50% mucilage intact, are spread on drying patios or raised beds, resting unstirred and covered in plastic for about 24 hours. They are then stirred daily from 8 AM to 2 PM and covered in plastic overnight to maintain temperature. The drying process takes up to 11 days and is finished in mechanical dryers at low temperatures to achieve the desired final humidity.

Espresso is roasted slightly deeper so that balance is achieved when brewed using the pressure of a coffee machine. Filter is a light roast for non pressured brewing to bring out the more delicate flavours of the coffee.
