FERMENTATION
Cherries are sorted by removing floaters and then are spread on drying patios or raised beds, resting unstirred and covered in plastic for about 24 hours. They are stirred daily from 8 AM to 2 PM, then covered in plastic overnight to maintain temperature. The drying process takes 12 to 16 days depending on weather conditions.
