FERMENTATION
Cherries are sorted by removing floaters and then pulped by pressing them against a centrifuge. After pulping, the beans, with 100% mucilage intact, are spread on drying patios or raised beds, resting unstirred and covered in plastic for about 24 hours. They are then stirred daily from 8 AM to 2 PM, then covered in plastic overnight to maintain temperature. The drying process takes up to 12 days and is then finished in mechanical dryers at low temperatures to achieve the desired final humidity.
