FILIPE ESTELA The Flores family has been producing coffee since the 1970s. After relocating to San Ignacio, Cajamarca in 2009, Faustino Flores established Finca El Morito. Their dedication to quality has earned them multiple placements in the prestigious Cup of Excellence, as recently as 2022.
FERMENTATION The wet process uses water to remove the coffee cherry's skin and pulp, followed by fermentation to break down the mucilage. During fermentation, natural enzymes convert sugars into acids, gases, or alcohol, which can influence the coffee's flavor. The beans are then rinsed, dried, and milled, preparing them for roasting.
